The meat of this fresh-water fish has a mild and clean flavor with a meaty texture. Prepare sturgeon like you would swordfish or halibut. 

SAFE HANDLING — Keep frozen until ready to use. Remove from packaging and defrost in the refrigerator 8-10 hours before use. Do not defrost at room temperature. Once defrosted do not refreeze and use within 3 days.

Farmed California sturgeon are raised on land and are several generations removed from threatened wild populations. For water management, the farm relies on a system that’s a best practice: they pump water through their sturgeon tanks, then to bass ponds, then filtered through their catfish and carp ponds. The high nutrient water gets sent to a neighboring farm to irrigate their fields for their cattle. As a result, the water gets re-absorbed through the same land and replenishes the aquifers. With this system, they have the highest water levels in the state of California, even in a drought.
