Cuttlefish Ink

Just a little bit of cuttlefish ink is enough to transform a dish. If preparing a risotto, try 1 tablespoon of ink for 1 cup of rice used. If working into a dough, it can be helpful to combine the ink with other liquid before adding it to the dry ingredients for a uniform distribution of color.

Cuttlefish Ink

Deepest black and with a mysterious taste of the sea, cuttlefish ink imparts a briny, umami flavor to dishes. Add a little cuttlefish ink to fresh pasta dough, stir into risottos and other rice dishes, and even try it in breads for a dramatic, eye-catching look.

Risotto al nero di seppia is a Venetian classic that's easy to master, topped with seafood like shrimp, lobster, or octopus. Imagine the sound of the waves against the walls of the Grand Canal as you stir, and you’re nearly there.

Sold in 3.2 oz. (90g) jars

Origin: Spain (wild)
