Also known as steelhead trout, these are rainbow trout raised at sea where they grow bigger and fattier than their on-land relations. Its dark red-orange flesh has a rich, buttery taste, firm texture, and a high fat content. Try fjord trout in raw or cooked dishes featuring salmon.
