Two Northeast oysters from the cold cold waters of New Brunswick and Prince Edward Island but very different flavors! Bijou Jewels are bright with sweet mineral notes, while Black Magic is smooth and vegetal. Both are so popular that we're currently running low even for our chefs! Luckily, we made sure Wulf's Oyster Club got dibs on some of these delicious treats.
Bijou - NB
The jewel of New Brusnwick, these petite oysters develop into an electric bolt that will warm the coldest of hearts. The strong shells hold onto bouncy meats that have a delicate brine and then open to a complex, vegetal symphony. Pairs well with ice cold vodka and sharing it with your beloved.
Black Magic - PEI
Everyone likes a little magic to their holidays, and this is the perfect place to start. The Black Magic oysters are grown among fine stones, sea grasses, and clay, giving this a library of finishes. These pair best with nothing but slurping them back and enjoying the ever-lingering sweet minerals on your palate. Sharing is optional.
