Cantabrian Anchovies

Spring harvest Cantabrian anchovies are sustainably caught in Spain using the purse seine method during when the anchovies are swimming closer to shore. They are then hand-cleaned, placed in barrels with salt layers for a 4-month maturation period. The result is anchovies carrying complex yet clean flavors. Each fillet is savory, aromatic, sweet, with a slight touch of bitterness from its natural fats.
