Best known for raw dishes, particularly sushi, madai has a sweet and delicate flavor.

SAFE HANDLING— Keep frozen until ready to use. Remove from packaging and defrost in the refrigerator 8-10 hours before use. Do not defrost at room temperature. Once defrosted, do not refreeze and use within 3 days.

In Japan, madai is prized as the best of the sea bream species and often saved for celebratory feasts and holidays.  

Revered for its delicate and sweet texture and flavor, it’s best served raw in sashimi or crudo. When cooked, its pinkish flesh becomes white with a firm, medium flake.
