Swordfish Piccata

Ingredients

  • 16 oz of Swordfish
  • 1 tablespoon neutral oil (vegetable, canola, avocado, etc)
  • 4 tablespoons of salted butter
  • 2 tablespoons of white wine (optional)
  • 1/4 cup of capers
  • juice from half a lemon
  • salt & pepper to taste
  • fresh herb of choice, we used thyme

Instructions

1.

Cut the 16 oz swordfish steak in half to make 2 portions, remove skin

2.

Salt and pepper to taste on both sides of the fish

3.

Heat up a pan to medium heat and add 1 tablespoon of neutral oil

4.

Place swordfish steaks in the pan and lightly press down for good contact with the pan

5.

Sear one side for 5 minutes until golden brown, then flip over for another 4 minutes

6.

Add in the 4 tablespoons of butter and fresh herbs, then gently baste the swordfish steaks

7.

Remove the steaks onto a plate to rest

8.

In the pan, add fresh lemon juice, capers, and white wine (optional) to the melted butter

9.

Gently whisk until the piccata sauce is well emulsified

10.

Spoon the sauce over the fish and enjoy!
