A new addition to our lineup, the Schoodic is the green goddess everyone craves. Grown in floating cages, the oysters develop deep cups and then are bottom planted where they get their signature green hue. The result is a deeply savory meat with a bright brine and a sweet vegetal finish - it screams for a gin and tonic, and maybe a flirty game of croquet.
