Best known for raw dishes, hiramasa is rich and delicious cooked and stands up to bold flavors. Try it pan-seared, baked or broiled. The firm, meaty texture of the cooked fish won't flake apart. 

SAFE HANDLING— Keep frozen until ready to use. Remove from packaging and defrost in the refrigerator 8-10 hours before use. Do not defrost at room temperature. Once defrosted, do not refreeze and use within 3 days.

A chef's choice for elegant crudos, Spencer Gulf Hiramasa Kingfish is a fine dining fish that home cooks rarely have access to. It may be best known for crudo, sushi and other raw preparations, but it's also excellent cooked with a meaty texture that won't flake apart on the grill or in braising.

A member of the jack family, it's known by many names: yellowtail amberjack, kingfish, yellowtail kingfish, hiramasa (Japanese), ricciola (Italian), or great amberjack. 

The fish are raised in the clean, icy waters of South Australia's Spencer Gulf where the fish are native. 

Sold in 8oz. packs of skin-on fillet, vacuum-packed and super-frozen.

Note: Fish contains a line of pin bones typical to this species that can be removed easily after cooking.
