As ancient as sturgeon themselves, this bony fish (a.k.a. "Chopique") yields small black, and sometimes red-tinted, roe that makes a good substitute for sturgeon caviar. It's highly regarded for its intense, earthy flavor with a mild tang and hints of spice.
