Raised in the cold, fast-moving waters off Spain’s Canary Islands, this Great Atlantic Sea Bass is the same species as the Mediterranean branzino (Dicentrarchus labrax)—but raised in a vastly different environment. You may also know this fish as the prized Lubina or Loup de Mer.
Those colder, more dynamic waters slow the fish’s growth, resulting in a larger fish with firmer texture and a deeper, more developed flavor. The loin part is thicker, and the fish is clean-tasting and versatile making it equally suited for roasting, grilling, or pan-searing.
Expect the delicate, mild profile you love from branzino, with a touch more richness. It’s also an excellent choice for crudo or sushi thanks to its pristine quality.
