It's farmed in California at the first and oldest fully sustainable caviar farm in America. The aquafarm uses pure water from the California foothills for its open recirculatory system, which helps the caviar retain some of the natural characteristics attributed to the white sturgeon's native environment. With broodstock dating back 30 years, the caviar produced by these farmed white sturgeon has been expertly curated for maximum quality with colors variation ranging from dark black to brown to amber and platinum-gold.
