Bluefin Tuna

Bluefin tuna is most prized in its raw form, whether that’s sashimi, crudo or poke. It can also be quickly seared.

SAFE HANDLING— Keep frozen until ready to use. Remove from packaging and defrost in the refrigerator 8-10 hours before use. Do not defrost at room temperature. Once defrosted, do not refreeze and use within 3 days.

Harpoon-caught off the coast of New England. Catching these fish individually by harpoon reduces bycatch (the unintended species that can be captured on a long line) and allows for meticulous handling of each fish. US domestic fisheries are highly regulated for the sustainability of wild fish populations. While bluefin populations in various parts of the world have been overfished, the Western Atlantic populations are now considered at a sustainable level and a managed fishery is permitted. Bluefin Tuna

Full of fat and flavor, bluefin tuna is a luxurious top choice of chefs and sushi lovers everywhere.

Sold in two forms: 1 lb steaks and 1 lb "toro" bellies, individually vacuum-packed and super-frozen

The fish caught in the fall have been feasting all summer and are fattier than the early season fish. This is the ideal for raw preparations. 

Market price for fish will vary from batch to batch. So will the relative value of steaks and bellies.

Note: this is all-natural, un-treated tuna, so it must be consumed within two weeks for peak visual appeal. Tuna will discolor and degrade after an extended stay in the freezer.
