From the clear southern waters of Kagoshima, Japan, this Hamachi is harvested at two years old for exceptional balance and richness. Baby hamachis are responsibly caught in Okinawa and raised slowly to maturity in the Kagoshima Bay, using a traditional ranched approach that prioritizes quality and animal wellness.
Also known as Yellowtail, this Japanese Hamachi is not like others. Each fillet is cut entirely by hand to protect the fish’s delicate texture and pristine flavor. Known in Japan as Buri and used most commonly for quality sushi, Hamachi is especially prized in winter and classically enjoyed in shabu shabu for the New Year.
