Grown in the icy and nutrient-rich waters of Acadia National Park, these oysters take their time to grow slowly while they feed voraciously. The result is a pristine white shell, with well defined hinges and thick shells for a solid shuck. The best part about these? THE FINISH! They start out with a icy and briny punch that opens up to a burst of minerals, fresh saline, and a robust buttery body to the meat. Think of the combination as a mall pretzel from your youth - just the right balance of everything you love. Recommended: High Life and 6 of these with nothing else involved. Its perfection. Not recommended: adding mustard to your oyster - save that for the pretzel

Cotuit - Cotuit, MA
Grower: Chris Garguilo

These oysters come from one of the oldest established brands dating back to 1857, and it is still going strong! These large beauties grow over the course of two years, starting out in protected bags and tumbled frequently to set a deep cup. Once at maturity, the oysters are bottom planted for finishing. The result is a larger and deeper cup, with beautiful full and smooth meats. The flavor starts with a gradual build of brine that meets at the pinnacle with a mellow mushroom and sugar kelp finish. This oyster screams for a flavorful hot sauce (have you tired Tapi Papi?) and a lively white like a Vinho Verde. Bring on Spring!
