Saku, is a Japanese term to describe sashimi quality seafood cut into blocks. Its rectangular shape is meant for easy portioning in sushi and sashimi applications but is also convenient in seared steaks or tataki format.

SAFE HANDLINGKeep frozen until ready to use. Remove from packaging and defrost in the refrigerator 8-10 hours before use. Do not defrost at room temperature. Once defrosted, do not refreeze and use within 3 days.

Cut only from the top loin of Loch Duart Heritage Salmon, this saku block is sashimi-ready. Only four portions per fish meet the requirements for this cut, making it a limited catch.

No skin, no bloodlines, only the top loin. This cut is ideal for sashimi and crudo, poke bowls, or if you prefer a skinless, loin-cut seared fillet.

Each saku will give you 10-12 pieces of sashimi or up to 16-18 nigiri slices. Sushi dinner at home can be ready in under 10 minutes!
