It's the holidays! We have some Christmas-themed oysters for you to enjoy. While both are from the North American East Coast, the difference in water temperature between the Cape and New Brunswick greatly distinguishes these two beautiful oysters. 

Merry Oysters - Duxbury, MA
Grown in off-bottom trays in the heart of Duxbury Bay, these oysters are the perfect balance of brine and butter. They are an essential ingredient to keeping everything merry and bright, with just hint of pure decadence. Pairs well with Riesling and Sancerre.

Belle du Jour - Bouctouche Bay, NB
Just because they are from icy waters, doesn't mean they can't melt your heart. Deep cups yield full, bouncy meats with a sweet and savory finish that lingers longer than the week between Christmas and New Years. The flavor profile is salty, sweet, and nutty. Enjoy with a dark beer or Muscadet or Chablis for wine lovers.

 

Merry Oysters from Duxbury, MA. Grown by Don Merry

Tasting Notes

These oysters' plump meats, set in deep cups, have the perfect balance of brine and butter. The Merry Duxburys pack an extra wallop of savory freshness.

Grow Out Method

The seed is raised in upwellers, bags, and cages, then bottom-planted when it's about 1.5 inches, where it matures into firm, strong-shelled, rich-tasting oysters.

Tasting Notes

Exceptionally savory, these medium brine oysters have crunchy meats and a sweet kelp finish.

Grow Out Method

Raised from seeds harvested in Bouctouche Bay, these oysters grow in suspended cages in the same plankton-rich water they were born in.

Pictured: Merry Oyster cages that help with maximum water flow. They sit on legs to keep oysters off the mud and frequent flipping and shaking of oyster bags in these cages are done to enjoy the growing oysters are healthy and happy.

Tasting Tips: 
  • Try the oysters side by side without any garnishes, lemon juice, or mignonette.  
  • Make sure you taste the "liquor" or juice of the oysters before enjoying the meat! 
  • Take in each oyster full and give it a couple chews to enjoy the texture and flavors.
  • Jot down some of your own notes on flavors – see what descriptors you can come up with and compare notes if you're tasting with a friend.
