Dueling Oyster Theme: East Coast vs. West Coast

The leaves are falling off the trees and the sun is setting earlier, but oysters are fat, big, and happy! We have a dueling coast/ Thanksgiving-themed selection this month, which is the inspiration anyone needs to get excited about the coziest season.



Cranberry Island - Mt Desert Narrows, ME

These incredible oysters are grown by an all female team led by Lauren Gray in the Cranberry Islands in the northern part of Acadia National Park. These oysters are surface frown  The result is a quick shuck with intense brine and a kelp-butter finish. These are begging for a dry cider or ice wine.

 

Chef's Creek - Deep Bay, British Columbia

The fast currents of Baynes sound tumble these purple-hued oysters for just over a year. The result is a silky and full meat  that opens  up to notes of fresh cucumber and crisp iceberg lettuce. These will be a perfect pairing for a light cheese board and a dry Riesling.

Tasting Tips: 
  • Try the oysters side by side without any garnishes, lemon juice, or mignonette.  
  • Make sure you taste the "liquor" or juice of the oysters before enjoying the meat! 
  • Take in each oyster full and give it a couple chews to enjoy the texture and flavors.
  • Jot down some of your own notes on flavors – see what descriptors you can come up with and compare notes if you're tasting with a friend.
